Tips for Storing Dried Herbs

1. Whole Herbs Last Longer. The first thing to consider is that herbs in their whole form last longer, crumble when ready to use.

2. Make Sure Your Herbs Are Totally Dry.

3. Store in Airtight Containers.

4. Keep Out of Direct Sunlight.

5. Keep in A Cool and Dry Location.

Au Jus Mix Recipe


Ingredients:


12 beef bouillon cubes (or 4 tbsp.
beef bouillon granules)

4 tsp. onion powder

2 tsp. parsley

¼ tsp. black pepper

¼ tsp. garlic powder

4 tbsp. cornstarch


Place all of the above ingredients in a blender or food processor. Process until the mixture turns into a fine powder. Store mix in an airtight jar or ziploc bag.


To prepare the Au Jus, mix 4 ½ tsp. of the Au Jus mix with 2 cups water and heat in a medium sauce pan for about 15 minutes until heated and slightly thickened. Serve.

Note: 4 ½ tsp. is equal to one McCormick french dip Au Jus mix packet.

Remove the outer layer and slice into 1/4 inch slices.Place the leeks on your dehydrator trays.

Dehydrate at 125° for 8 hrs or until dried. Store in a mason jar or vacuum seal in bags.

Using Dried Herbs & Spices

Since herbs and spices are usually 3 to 4 times stronger than their fresh counterparts, use conservatively.

Their taste should be subtle and not overpowering. The zest of dried herbs is dependent upon storage

condition and length of time stored. Sharpness of flavor deteriorates with age. Some herbs, such as

mint or basil, lose their flavor more rapidly than others when dried. It may take nearly an equal volume

of some dried herbs to replace the amount of fresh called for in recipe.

Ginger





Step 1. Wash and then peel ginger.

Step 2. Slice ginger into thin pieces approximately 1/8″ thick.

Step 3. Lay ginger out on your dehydrator tray. For smaller pieces set them on a tray with a netting on top so that the pieces don’t fall through as they dehydrate. I put that tray below the tray with the bigger pieces in case any of the larger pieces fell through when dehydrating.

Step 4. Dehydrate at 135F for approximately 3-4 hours or until ginger is completely dried and snaps when bent.

To Rehydrate tomatoes powder into... 
Sauce =1 part tomato powder to 2 parts water.
Paste = 1 part tomato powder to 1 part water
